More tips for making mini pumpkin pies:
- You’ll need a biscuit cutter to make these pumpkin pie bites. I have a biscuit cutter set just like this one from Amazon.com and used the two smaller sizes to create two sizes of mini pumpkin bites.
- Like my pretty cake stand? It’s the Madison marble & brass cake stand from WestElm.com! I love it so much. My husband bought it as a birthday gift for me last year!
- After finishing your mini pumpkin pies, don’t forget to use up your pie scraps! I used some of mine to make an amazing pumpkin pie milkshake with vanilla ice cream and pumpkin pie scraps. You could make a smoothie with the pie filling, or add some to your oatmeal or pancakes for breakfast.

I love this easy no-bake idea. Once when my daughter was younger, her class had a Thanksgiving party at school and we served the Costco pumpkin pie like this for the kids. The mini pumpkin pies were much easier for them to grab and go instead of slices. So fun!
