Corn casserole is an old-fashioned sweet and savory dish and is a combo of Jiffy corn muffin mix with creamed and whole-kernel corn. This along with butter and sour cream make a dreamy casserole that you will want to dive into! I love how it comes out buttery, rich, and super creamy instead of plain cornbread.

If you are like me and love the holiday side dishes maybe even more than the main dish, this is for you! Plus this is a pretty economical recipe as it costs less than $10 to make in groceries.

We tend to stick to the original recipe from JiffyMix.com except for using the normal 14-15 oz cans of corn, instead of the 8 oz. cans it usually calls for.

Sweet and savory corn casserole is made with canned corn and Jiffy corn muffin mix as an easy side dish.

Preheat the oven to 375 degrees. Grease a 9x9 casserole dish.

In a mixing bowl add the two eggs and whisk them. Add the remaining ingredients and stir the batter until combined.

Pour the mixture into the pan, and level. Bake for 30-35 minutes until the middle is firm and the edges are browned. Serve warm.

Extra tips for making this easy corn casserole recipe:

  • This idea serves 6-9 people depending on how big you slice it, but can easily be doubled for a larger crowd in a 9×13 casserole dish. This is what we sometimes do to ensure leftovers. The baking time may be a few minutes longer. You’ll know it’s done when the middle is set and the sides are browned.
  • I have not personally tested it, but have read you can compile all of these ingredients and make the casserole in a Crock-Pot instead of the oven. Try cooking on high for 2-3 hours until cooked through.
  • Feel free to mix things up and use various add-ins. Some people add cheddar cheese to the top and mix in cooked bacon pieces, chopped jalapeños, or green chiles. This is super versatile and easy to cater to taste.
