These cheesy Texas toast meatball subs come together quickly and easily on busy weeknights.

Instead of spaghetti dinner, create melted subs using meatballs and frozen Texas toast from the freezer, along with your jar of favorite marinara sauce from the pantry. This is not anything fancy, but sometimes easy dinner hacks like this one can be useful!
I recently tried this fun idea for a simple yet hearty meal, and my family enjoyed it. We served ours with a bag of salad, and it was a winning dinner amid the busy back-to-school weeknight routine. The result is delicious buttery bread with saucy cheese meatballs. YUM!
Open-Faced Texas Toast Meatball Subs

Ingredients
- 26 oz. bag frozen meatballs
- 32. oz. marinara sauce
- 8 slices frozen Texas Toast
- 8 oz. fresh sliced mozzarella cheese
- topping idea: freshly sliced basil

Preheat oven according to Texas toast directions.

In a large saucepan add the meatballs and marinara sauce. Let simmer until cooked (about 20-25 minutes).

Place the garlic toast on a sheet pan and cook to package instructions (about 6-8 minutes.) Remove from the oven. Press down on the middle of each garlic toast.

Add meatballs and sauce to the top of each garlic toast. Add a slice or two of mozzarella cheese. Pop them back in the oven for about 5 additional minutes to melt the cheese. Top with sliced basil if desired!
Tips for making the best Texas toast subs:
- We used fresh mozzarella and loved it. You can use shredded cheese or even provolone slices would be great. Use what your family prefers or the cheese you have on hand!
- Pressing down on your toast after it’s initially toasted will help the meatballs stay in place on the bread.
- Next time, I may try this with mini meatballs, as those may stay on the bread easier!
- Make this a complete meal with a bag of salad mix or a side of veggies.
