Rice cakes are back in style, and here’s a fun high-protein twist. 

Let’s address the crunchy elephant in the room. Rice cakes used to be the sad, cardboard-tasting diet food of the 90s.

Well, guess what? They’re back and glow’d up. Think of them as your trendy, low-cal base for building snackable masterpieces. Today, we’re giving them a fun and unique dessert treatment with added protein using protein powder.

The chocolate rice cakes are topped with a chocolate Cool Whip mousse and a melted chocolate coating. This is for the snack-lovers, the late-night grazers, and the people who whisper “just one more bite” like a mantra. The best part is, these take just a few minutes to compile.

If you love finding unique ways to incorporate protein powder into your day this is delicious. We first saw the protein rice cake s’mores on TikTok via TheSamPlan, and I wanted to try making a chocolate version.

Protein Rice Cake S'mores

Directions

Place the rice cakes on a sheet pan. Mix the Cool Whip and the protein powder. Add that to the top of each rice cake and spread evenly.

In a microwave-safe bowl, melt the chocolate chips for 20-second increments and stir until melted. Pour this over the rice cakes.

Freeze for one or two hours until set. Enjoy cold.

More tips for making these easy s’mores rice cakes:

  • Use any flavor you desire for this idea. I have a peanut butter protein powder that also would be tasty. I know there is even a marshmallow-flavored protein powder that’s super popular!
  • I think the best texture is to leave them in the freezer for just an hour or so or let them thaw out a bit if completely frozen, until a little soft.

  • I forgot to add some sea salt flakes to the top, but I bet that’d be delish!

My daughter is loving all the fun TikTok-inspired rice cake treats people are making using various flavors and toppings. She takes a peanut butter and jelly one to school sometimes. My go-to used to be the sea salt variety with peanut butter and chocolate chips, but this one may just take the top spot for me!
