Healthy (and Budget Friendly) Sheet Pan Sausage and Veggies

It’s the ultimate “no-fuss” dinner. Everything is chopped, tossed in one bowl, and roasted on a single pan. By using filling staples like red potatoes and onions, we stretch a single ring of smoky sausage into a hearty meal that actually satisfies everyone at the table. It’s a win for the grocery budget, a win for the dishwasher by using few dishes, and a healthy, high-protein win for the family.

Ingredients

  • 1 lb smoked sausage (kielbasa or similar), sliced into 1/2-inch rounds
  • 1.52 lbs red-skinned potatoes, cut into 1-inch chunks
  • 1 large zucchini, sliced into half-moons
  • 1 large red bell pepper, cut into 1-inch chunks
  • 23 Tbsp olive oil (to coat everything)
  • Seasonings: 1 tsp dried oregano, 1/2 tsp garlic powder, salt, and freshly ground black pepper (as seen in the image).

Instructions

Preheat Oven: Start by preheating your oven to 400°F (200°C). This temperature is ideal for roasting.

Prep the Ingredients: Wash all the produce. Cut the potatoes into uniform 1-inch chunks, so they cook at the same rate. Slice the zucchini into half-moons and the red bell pepper into chunky squares. Slice the sausage into clean, uniform rounds.

Combine and Season: In a large mixing bowl, combine the chopped potatoes, sliced zucchini, red bell pepper, and sausage. Drizzle with 2–3 tablespoons of olive oil. Add your seasonings: garlic powder, oregano, salt, and black pepper. Use your hands to toss everything together thoroughly, ensuring every piece is evenly coated in oil and spices.

Arrange on a Sheet Pan: Take a large, rimmed baking sheet and line it with aluminum foil (not required, but great for easy cleanup). Once the mixture in the bowl is well-combined, carefully pour and spread the seasoned sausage and vegetable mixture onto the foil-lined baking sheet in a single, even layer. Do not overcrowd the pan, or the vegetables will steam instead of roasting.

Roast: Place the baking sheet on the middle rack of your preheated oven. Bake for 30–40 minutes, or until the potatoes are tender when pierced with a fork and the edges of the sausage are slightly browned and caramelized.

Serve: Remove from the oven and serve immediately. This meal is complete on its own, but can also be served with a sprinkle of fresh parsley or a dash of hot sauce if desired.
