Egg Roll in a Bowl ($10 Family Dinner Idea)

1 hour ago 2

Egg Roll in a Bowl is an easy, healthy skillet meal that comes together in less than 30 minutes! You can find variations of this recipe all over the internet, but if you’re looking for the easiest, fastest one — this is it, haha! It starts with bagged coleslaw mix, so it involves minimal chopping. I love making extras of this to have on hand for quick lunches for myself.

You can use any kind of ground meat that you like! It works with ground chicken, turkey, pork, beef, venison, or sausage. I used ground turkey this particular time since I’d gotten some on markdown. You can also top the finished stir fry with sesame seeds if you like them.

I serve Egg Roll in a Bowl with rice and call it a meal. I like to stir some sesame oil into the rice after it’s finished cooking, and top it with chopped green onions or cilantro.

How to Make Egg Roll in a Bowl:

1. Cook the rice according to the directions on the bag, using your preferred cooking method.

2. While the rice is cooking, brown the ground turkey over medium-low heat in a large skillet or wok, stirring until done. Stir in the white part of the chopped onions (save the chopped green tops for garnish), minced garlic, and chopped ginger. Continue cooking and stirring until the vegetables are tender (if needed, add in olive oil so that nothing is sticking to the bottom of the pan).

3. Add in the coleslaw mix and continue cooking for another 5-7 minutes, or until cabbage is tender.
